Garlic Hummus Wraps


These wraps are a fantastic dinner for a hot summer night. They are a great way to get lot’s of veggies and good fats into your diet. I suggest eating them with a salad.  Begin with your favorite wrap. I use an organic whole wheat wrap, but there are many options. Next, add your fillings. I like to stuff with cooked quinoa, shredded carrots, sprouts, cucumbers, and of course, hummus.

Here is a fabulous recipe for garlic hummus.

1/4 cup Tahini                        1/2 t salt
1/4 cup Lemon Juice           1/2 t Ground Cumin
2T Olive Oil                             2-3 T Water
1/2t Minced Garlic                 15oz Can of Garbanzo Beans, Rinsed
Dash Paprika                         Chopped Cilantro

Begin by blending the tahini and lemon juice for 1 minute. Add the garlic, olive oil, cumin and salt and whip for 1 more minute. Add garbanzo beans until smooth, adding more water if necessary. Top with paprika, cilantro and drizzle with olive oil before serving.
