Texas Caviar
- 2 (15.8 ounce) cansblack-eyed peas, drained and rinsed
- 1(15.8 ounce) can of black beans, drained and rinsed
- 16 ounces of frozen organic corn
- 1 small onion, diced
- 1 bell pepper, stemmed, seeded and diced
- 1/4 cup chopped fresh cilantro
- 1 tsp salt
- 1 tsp pepper
- 2 TBSP Cumin
- 1 Cup Chopped Celery
- 1/2 Cup Organic Raw Sugar
- 1/2 Cup Organic Canola oil
- 3/4 Cup Vinegar
- 1 Cup Wheat Berries
- Large Lettuce or cabbage leavesBegin by cooking the wheat berries on the stove (about 1 hour until cooked). Combine the Sugar, Oil, and Vinegar in a saucepan and heat on the stove until the sugar has dissolved; then let cool. When those steps are completed, mix all ingredients, except the lettuce, in a large bowl and let sit in the refrigerator for 2 hours. To serve, spoon the mix onto large lettuce leaves and eat with your hands.
