Texas Caviar


  • 2 (15.8 ounce) cansblack-eyed peas, drained and rinsed
  • 1(15.8 ounce) can of black beans, drained and rinsed
  • 16 ounces of frozen organic corn
  • 1 small onion, diced
  • 1  bell pepper, stemmed, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • 1 tsp salt
  • 1 tsp pepper
  • 2 TBSP Cumin
  • 1 Cup Chopped Celery
  • 1/2 Cup Organic Raw Sugar
  • 1/2 Cup Organic Canola oil
  • 3/4 Cup Vinegar
  • 1 Cup Wheat Berries
  • Large Lettuce or cabbage leavesBegin by cooking the wheat berries on the stove (about 1 hour until cooked). Combine the Sugar, Oil, and Vinegar in a saucepan and heat on the stove until the sugar has dissolved; then let cool. When those steps are completed, mix all ingredients, except the lettuce, in a large bowl and let sit in the refrigerator for 2 hours. To serve, spoon the mix onto large lettuce leaves and eat with your hands.
