I timed myself yesterday. I made this soup and 5 fresh salads in 23 minutes. What a great dinner for a cool, busy evening.
1 Medium Onion, Chopped
15 oz Canned Kidney Beans, Rinsed
15 oz Canned Garbanzo Beans, Rinsed
15 oz Petite Diced Tomatoes
4 Cups Vegetable Broth
2 Cups Frozen Veggies
3/4 Cup Small Whole Wheat Pasta
1 t Dried Basil
1 t Coconut Oil
Saute onion in coconut oil until translucent. Add remaining ingredients except for the noodles. Bring to a boil and then reduce and summer for 10 minutes. Cook pasta separately and add when served.
